- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, almond flour, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture.
- Roll out the dough on a floured surface to about 1/4 inch thick and cut into shapes.
- Bake on a baking sheet for 8-10 minutes or until edges are lightly golden.
- Let cookies cool completely, spread raspberry jam on solid cookies, and sandwich with cutout cookies. Dust top with powdered sugar.
