Ingredients

  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract for filling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg, red food coloring, and vanilla extract to the creamed mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet.
  7. Bake for 8-10 minutes until the edges are set and centers are still soft.
  8. Beat the cream cheese, powdered sugar, and vanilla extract together until smooth for the filling.
  9. Once cookies are cooled, spread the cream cheese filling between two cookies.
  10. Serve and enjoy!
