Ingredients

  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a large bowl, mix together vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then turn them onto a wire rack to cool completely.
  7. For the frosting, beat together the softened cream cheese and butter until creamy and smooth.
  8. Gradually add the powdered sugar and mix until smooth. Add the vanilla extract and mix again.
  9. Once the cakes are cooled, spread a layer of frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake generously.
  10. Slice and serve the beautiful cake. Enjoy!

Notes

Serve at room temperature for best flavor. Pairs well with coffee or tea. Garnish with fresh berries or chocolate shavings.
