  • Shredded coconut
  • Additional raspberries or mixed berries
  • Extra drizzle of maple syrup

Instructions

  1. In a medium-sized bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.
  2. Gently fold in the raspberries, being careful not to break them too much. They should remain somewhat whole for added texture and flavor.
  3. Cover the bowl and refrigerate for at least 4 hours, or ideally overnight. This allows the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
  4. Once set, give the pudding a good stir. Serve it in bowls and top with additional raspberries, sliced almonds, shredded coconut, and a drizzle of maple syrup for extra sweetness.
