Description

Delicious and nutritious cookies made with quinoa, oats, banana, and honey, perfect for breakfast or a snack.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup oats
  • 1/2 cup almond butter
  • 1/4 cup honey (or maple syrup)
  • 1 ripe mashed banana
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine cooked quinoa, oats, almond butter, honey (or maple syrup), mashed banana, and vanilla extract. Mix well until fully combined.
  3. In a separate bowl, whisk together baking soda and cinnamon, then add this mixture to the wet ingredients. Stir until well mixed.
  4. If adding chocolate chips, fold them in now.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flattening them slightly. Bake for 12-15 minutes until edges are golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Great for meal prep, these cookies can be stored in an airtight container for up to 5 days or frozen for up to three months.
