- 1 cup brown sugar

- 1 cup pumpkin puree

- 1 teaspoon ground cinnamon

- 1/2 cup brewed coffee, cooled
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until smooth (about 2-3 minutes). Beat in the pumpkin puree, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the cooled coffee and chocolate chips.
- Drop spoonfuls of dough onto ungreased cookie sheets, spacing them about 2 inches apart. Bake for 12-15 minutes or until edges are lightly golden. Cool on a wire rack before serving.
