Description

Delightful autumn waffles combining pumpkin and pearl sugar for a light, fluffy, and slightly crispy breakfast treat.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup pearl sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a mixing bowl, whisk together the flour, pearl sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until fully combined.
  3. In another bowl, combine the pumpkin puree, eggs, milk, melted butter, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients, and mix until just combined.
  5. Grease the waffle iron if needed, pour the batter onto the hot waffle iron, and cook until golden brown and crispy, about 5 minutes.
  6. Remove the waffles from the iron and serve warm with toppings like whipped cream or maple syrup.

Notes

For a richer flavor, use fresh pumpkin puree. Avoid overmixing to keep waffles tender.
