Description

A delicious and nutritious cheesecake made with Greek yogurt and almond flour, perfect for a guilt-free dessert.


Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons sweetener of choice (like honey or stevia)
  • 1 cup cream cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup protein powder (vanilla or preferred flavor)
  • 1/4 cup sweetener of choice
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the almond flour, melted coconut oil, and sweetener until well combined, then press into the bottom of a greased 8-inch springform pan to form a crust.
  3. Beat the softened cream cheese until smooth, then add Greek yogurt, protein powder, sweetener, vanilla extract, and eggs, blending until creamy.
  4. Pour the cream cheese filling over the crust and bake for 25-30 minutes, until edges are set but the center jiggles slightly.
  5. Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours to set.

Notes

Serve with fresh berries or a drizzle of dark chocolate for a special touch. Store in the refrigerator for up to one week.
