- 1 cup almond flour
- 2 tablespoons coconut oil, melted
- 2 tablespoons sweetener of choice (like honey or stevia)
- 1 cup cream cheese, softened
- 1 cup Greek yogurt
- 1/2 cup protein powder (vanilla or preferred flavor)
- 1/4 cup sweetener of choice
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the almond flour, melted coconut oil, and sweetener until well combined, then press into the bottom of a greased 8-inch springform pan to form a crust.
- Beat the softened cream cheese until smooth, then add Greek yogurt, protein powder, sweetener, vanilla extract, and eggs, blending until creamy.
- Pour the cream cheese filling over the crust and bake for 25-30 minutes, until edges are set but the center jiggles slightly.
- Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours to set.
Notes
