- 4 medium sweet potatoes
- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or your choice)
- 1 teaspoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Toppings of your choice (sour cream, green onions, avocado, etc.)
Instructions
- Preheat the oven to 400°F (200°C). Pierce each sweet potato several times with a fork.
- Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.
- In a skillet, heat the olive oil over medium heat. Add the ground turkey, chili powder, cumin, salt, and pepper; cook until the turkey is browned.
- Stir in the drained and rinsed black beans and cook for a few more minutes.
- Let the sweet potatoes cool slightly, then cut each open lengthwise and fluff the inside.
- Stuff each potato with the turkey and bean mixture, then top with shredded cheese.
- Return the stuffed sweet potatoes to the oven for 5-10 minutes, or until the cheese is melted.
- Add your favorite toppings before serving. Enjoy!

Choose firm sweet potatoes for best results. Customize spices and toppings as you like.
