Description

A nutritious and delicious dish featuring sweet potatoes stuffed with ground turkey, black beans, and cheese.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings of your choice (sour cream, green onions, avocado, etc.)

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce each sweet potato several times with a fork.
  2. Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.
  3. In a skillet, heat the olive oil over medium heat. Add the ground turkey, chili powder, cumin, salt, and pepper; cook until the turkey is browned.
  4. Stir in the drained and rinsed black beans and cook for a few more minutes.
  5. Let the sweet potatoes cool slightly, then cut each open lengthwise and fluff the inside.
  6. Stuff each potato with the turkey and bean mixture, then top with shredded cheese.
  7. Return the stuffed sweet potatoes to the oven for 5-10 minutes, or until the cheese is melted.
  8. Add your favorite toppings before serving. Enjoy!

Notes

Choose firm sweet potatoes for best results. Customize spices and toppings as you like.
