- 2 cups cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup pizza sauce
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1/2 cup sliced olives
- 1 teaspoon dried Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup crushed or sliced pepperoni (optional)
- 2 cups cooked pasta (penne or rotini)
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking dish.
- In a large bowl, combine cottage cheese, mozzarella cheese, Parmesan cheese, pizza sauce, diced bell peppers, sliced mushrooms, sliced olives, dried Italian seasoning, garlic powder, salt, and pepper. Stir to mix.
- If using, stir in pepperoni and cooked pasta.
- Pour the mixture into the greased baking dish evenly. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden.
- Allow to cool for a few minutes before serving.
Notes
Serve with a crisp salad or garlic bread. Can be stored in an airtight container for up to 4 days in the fridge or frozen for 2 months.
