A delicious comfort food combining cheesy goodness with healthy cottage cheese. Perfect for weeknight dinners and customizable based on your pantry.


Ingredients

  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pizza sauce
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1/2 cup sliced olives
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed or sliced pepperoni (optional)
  • 2 cups cooked pasta (penne or rotini)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. In a large bowl, combine cottage cheese, mozzarella cheese, Parmesan cheese, pizza sauce, diced bell peppers, sliced mushrooms, sliced olives, dried Italian seasoning, garlic powder, salt, and pepper. Stir to mix.
  3. If using, stir in pepperoni and cooked pasta.
  4. Pour the mixture into the greased baking dish evenly. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden.
  5. Allow to cool for a few minutes before serving.

Notes

Serve with a crisp salad or garlic bread. Can be stored in an airtight container for up to 4 days in the fridge or frozen for 2 months.
