Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup finely chopped pistachios
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Your favorite jam or preserves for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract and salt until well combined. Gradually add flour and cornstarch, mixing until just combined.
  4. Fold in the chopped pistachios gently.
  5. Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet.
  6. Use your thumb to make an indentation in the middle of each ball.
  7. Fill each indentation with your favorite jam or preserves.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on a wire rack before serving.

Notes

Best served at room temperature. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
