- 1/2 cup powdered sugar
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 cup finely chopped pistachios
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Your favorite jam or preserves for filling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract and salt until well combined. Gradually add flour and cornstarch, mixing until just combined.
- Fold in the chopped pistachios gently.
- Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet.
- Use your thumb to make an indentation in the middle of each ball.
- Fill each indentation with your favorite jam or preserves.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on a wire rack before serving.
