- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/2 cup pistachios, chopped
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and powdered sugar until smooth and fluffy. Gradually mix in the flour and salt, then stir in the chopped pistachios and vanilla extract.
- Roll the dough into logs about 1 inch in diameter and refrigerate for at least 30 minutes.
- Slice the chilled dough into 1/4 inch thick pieces and place them on a baking sheet. Bake for 10-12 minutes or until the edges are lightly golden. Let cool before serving.
Notes
For a sweeter cookie, add more powdered sugar. Store in an airtight container at room temperature for up to one week or freeze for up to three months.
