  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup crushed pineapple (drained)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking soda, salt, and cinnamon.
  3. Combine the crushed pineapple, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure pineapple is well-drained to avoid excess moisture. Fresh pineapple is preferred, but canned is also acceptable. Variations include adding nuts or shredded coconut.
