- 3/4 cup crushed pineapple (drained)

- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix together the flour, sugar, baking soda, salt, and cinnamon.
- Combine the crushed pineapple, vegetable oil, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure pineapple is well-drained to avoid excess moisture. Fresh pineapple is preferred, but canned is also acceptable. Variations include adding nuts or shredded coconut.
