Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan.
  3. In a bowl, whisk together the flour and baking powder.
  4. Cream the softened butter and granulated sugar until fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then pour in the vanilla extract.
  6. Gradually combine the wet and dry mixtures, stirring until just combined.
  7. Fold in the drained crushed pineapple and shredded coconut.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes before transferring it to a cooling rack.
