Ingredients

  • 1 cup pineapple chunks
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a bowl, mix soy sauce, cornstarch, sesame oil, salt, and pepper. Marinate the chicken in this mixture for at least 30 minutes.
  2. Heat oil in a skillet over medium heat. Add the marinated chicken and cook until browned on both sides, approximately 5–7 minutes.
  3. Add minced garlic, chopped onion, and bell pepper to the skillet. Sauté until the vegetables are tender, around 3–4 minutes.
  4. Stir in the pineapple chunks and continue to cook until heated through, about 2 minutes.
  5. Serve the Pineapple Chicken hot over cooked rice.

Notes

For extra flavor, let the chicken marinate longer than 30 minutes. Don’t skip browning the chicken for added depth of flavor. You can replace chicken with tofu or shrimp for a variation.
