- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/4 cup green onions, sliced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, grated
Instructions
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown, about 6-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
- In the same skillet, sauté the chopped onion, minced garlic, and diced red bell pepper until softened, approximately 3-4 minutes.
- Stir in the cubed pineapple and cook for another 2 minutes.
- Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes.
- Finally, return the cooked chicken to the skillet, mixing gently to combine all ingredients. Heat everything through for about 1 minute. Serve hot, garnished with sliced green onions and a sprinkle of sesame seeds.
Notes
Use fresh pineapple for the best sweetness and texture. Substitute chicken breast with thighs for more juiciness.
