Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown, about 6-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
  2. In the same skillet, sauté the chopped onion, minced garlic, and diced red bell pepper until softened, approximately 3-4 minutes.
  3. Stir in the cubed pineapple and cook for another 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper to the skillet. Bring to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes.
  5. Finally, return the cooked chicken to the skillet, mixing gently to combine all ingredients. Heat everything through for about 1 minute. Serve hot, garnished with sliced green onions and a sprinkle of sesame seeds.

Notes

Use fresh pineapple for the best sweetness and texture. Substitute chicken breast with thighs for more juiciness.
