- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 cup jasmine rice
- 2 cups chicken broth
- 1/4 cup green onions, sliced
Instructions
- Begin by cubing the chicken breast and pineapple. Slice the green onions.
- In a saucepan, bring 2 cups of chicken broth to a boil. Add the jasmine rice, cover, and reduce the heat to a simmer. Cook the rice until tender, which usually takes about 15 minutes.
- While the rice cooks, heat a skillet over medium heat. Add the cubed chicken and cook until it’s golden brown and fully cooked, about 5-7 minutes.
- Stir in the cubed pineapple and the remaining chicken broth to the skillet with the cooked chicken. Allow this mixture to simmer for about 5 minutes.
- Once the rice is ready, add it to the skillet and mix everything together well.
- Serve the dish garnished with sliced green onions for a pop of color and fresh flavor.
Notes
