  • 1 cup pineapple, cubed
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1/4 cup green onions, sliced

Instructions

  1. Begin by cubing the chicken breast and pineapple. Slice the green onions.
  2. In a saucepan, bring 2 cups of chicken broth to a boil. Add the jasmine rice, cover, and reduce the heat to a simmer. Cook the rice until tender, which usually takes about 15 minutes.
  3. While the rice cooks, heat a skillet over medium heat. Add the cubed chicken and cook until it’s golden brown and fully cooked, about 5-7 minutes.
  4. Stir in the cubed pineapple and the remaining chicken broth to the skillet with the cooked chicken. Allow this mixture to simmer for about 5 minutes.
  5. Once the rice is ready, add it to the skillet and mix everything together well.
  6. Serve the dish garnished with sliced green onions for a pop of color and fresh flavor.

Notes
