  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple (drained)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream the unsalted butter and sugar together until fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt, then gradually add this mixture to the wet ingredients, alternating with buttermilk.
  5. Fold in the crushed pineapple and walnuts, if using.
  6. Pour the batter into the prepared cake pan and smooth the top; bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
