Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream the unsalted butter and sugar together until fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, combine the flour, baking powder, baking soda, and salt, then gradually add this mixture to the wet ingredients, alternating with buttermilk.
- Fold in the crushed pineapple and walnuts, if using.
- Pour the batter into the prepared cake pan and smooth the top; bake for 25-30 minutes or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Draining the pineapple is important to avoid excess moisture. Serve with whipped cream or vanilla ice cream for a delightful treat.
