- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cups cauliflower rice
- 1 cup shredded cheese (provolone or cheddar)
- Salt and pepper to taste
- Optional toppings: jalapeños, hot sauce, or guacamole
Instructions
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Add the sliced steak, season with salt and pepper, and cook until browned, stirring occasionally.
- Add the sliced bell pepper and onion to the skillet and sauté until tender, about 4-5 minutes.
- Heat the cauliflower rice in a separate pan over medium heat until warmed through.
- Place the cauliflower rice at the bottom of serving bowls, top with the steak and vegetable mixture, then sprinkle cheese on top.
