- 2 pounds ripe tomatoes
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup fresh basil leaves
- 4 cups vegetable broth
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat your oven to 400°F (200°C). Wash the tomatoes and cut them in half. Place on a baking sheet with the chopped onion and minced garlic.
- Drizzle the veggies with olive oil and season with salt and pepper, coating well.
- Roast for 25-30 minutes until the tomatoes are caramelized and tender.
- Remove from the oven and let cool slightly. Combine roasted vegetables, fresh basil, and vegetable broth in a pot. Simmer for 10-15 minutes.
- Blend the soup to your desired consistency and stir in balsamic vinegar if using. Adjust seasoning and serve hot.
Notes
Use the ripest tomatoes for the best flavor. This soup pairs well with crusty bread or grilled cheese.
