Description
A quick and delicious skillet meal featuring juicy chicken breasts in a creamy pepperoncini sauce, perfect for busy weeknights.
Ingredients
Scale
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 3/4 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sliced pepperoncini
- 2 tablespoons chopped fresh parsley
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 6–7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth, scraping up any brown bits from the skillet, and bring to a simmer.
- Stir in heavy cream and sliced pepperoncini. Simmer for 3–4 minutes until the sauce slightly thickens.
- Return the chicken to the skillet and spoon the sauce over the top. Heat through for an additional 2 minutes.
- Garnish with chopped parsley and serve hot.
Notes
Serve over rice, polenta, or with roasted vegetables. For a lighter version, use half-and-half instead of heavy cream.
