Description

A quick and delicious skillet meal featuring juicy chicken breasts in a creamy pepperoncini sauce, perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sliced pepperoncini
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 6–7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in chicken broth, scraping up any brown bits from the skillet, and bring to a simmer.
  5. Stir in heavy cream and sliced pepperoncini. Simmer for 3–4 minutes until the sauce slightly thickens.
  6. Return the chicken to the skillet and spoon the sauce over the top. Heat through for an additional 2 minutes.
  7. Garnish with chopped parsley and serve hot.

Notes

Serve over rice, polenta, or with roasted vegetables. For a lighter version, use half-and-half instead of heavy cream.
