- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup chocolate chips
- 1/2 cup crushed peppermint candies or peppermint baking chips
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture until just combined. Fold in chocolate chips and crushed peppermint candies.
- Drop spoonfuls of dough onto ungreased baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes until the edges are golden brown.
- Let cookies cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For thicker cookies, consider chilling the dough for 30 minutes before baking. Store in an airtight container for up to one week or freeze for longer storage.
