Pecan Pie Cookies offer the sweet, comforting flavors of traditional pecan pie in a delightful cookie form. With a crispy exterior and a chewy interior, these treats are perfect for any occasion.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup chopped pecans
  • 1/2 cup corn syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter, brown sugar, and granulated sugar until smooth. Beat in egg and vanilla until well combined.
  3. In another bowl, mix flour, salt, and baking soda. Gradually add to wet ingredients, mixing until just combined. Stir in pecans and corn syrup.
  4. Drop spoonfuls of dough onto a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
  5. Allow to rest on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with milk or coffee. Store in an airtight container for up to a week. Can freeze for up to three months.
