  • 1 cup creamy peanut butter
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large ripe banana, mashed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the softened butter, peanut butter, brown sugar, and granulated sugar until light and airy.
  3. Blend in the mashed banana, egg, and vanilla extract until homogenous.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually integrate into the wet mixture, mixing until just combined.
  5. Fold in the chocolate chips until evenly distributed.
  6. Drop tablespoon-sized portions of dough onto the baking sheets, spacing them 2 inches apart. Bake for 11 to 13 minutes until edges are golden.
  7. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and chill the dough for extra chewiness.
