- 1 ripe banana
- 1/2 cup peanut butter
- 1 cup oats
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe banana in a mixing bowl until smooth.
- Add the peanut butter, honey or maple syrup, salt, and vanilla extract to the mashed banana, and mix well.
- Stir in the oats and chocolate chips until well combined.
- Drop spoonfuls of the mixture onto a lined baking sheet and bake for 10-12 minutes or until golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
