Description

Delicious and healthy breakfast cookies made with ripe bananas and peanut butter, perfect for a quick start to your day.


Ingredients

  • 1 ripe banana
  • 1/2 cup peanut butter
  • 1 cup oats
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe banana in a mixing bowl until smooth.
  3. Add the peanut butter, honey or maple syrup, salt, and vanilla extract to the mashed banana, and mix well.
  4. Stir in the oats and chocolate chips until well combined.
  5. Drop spoonfuls of the mixture onto a lined baking sheet and bake for 10-12 minutes or until golden brown.
  6. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
