Description

Delightful pastries filled with sweet, juicy peaches and a hint of cinnamon, perfect for dessert or snacks.


Ingredients

  • 1 cup fresh peaches, peeled and diced
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 package refrigerated pie crusts
  • 1 egg (for egg wash)
  • Oil for frying

Instructions

  1. In a bowl, combine the diced peaches, sugar, cornstarch, cinnamon, and lemon juice. Mix well and set aside.
  2. Roll out the pie crusts on a clean, floured surface and cut into circles, about 4-5 inches in diameter.
  3. Place a spoonful of the peach mixture in the center of each circle. Fold and seal the edges. Brush with beaten egg.
  4. Heat oil in a frying pan over medium heat and fry the hand pies until golden brown, about 2-3 minutes per side. Drain on paper towels.

Notes

Serve warm with vanilla ice cream or whipped cream. Store in an airtight container for up to a week or freeze for longer storage.
