- 2 medium zucchini
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- Salt and pepper to taste

Instructions
- Preheat the oven to 425°F (220°C).
- Slice the zucchini into fry-shaped pieces.
- Set up a breading station: Beat the eggs with salt and pepper in one bowl, and mix grated Parmesan cheese and breadcrumbs in another bowl.
- Dip each zucchini piece into the egg mixture, then coat with the Parmesan-breadcrumb mixture.
- Place the coated fries on a baking sheet lined with parchment paper.
- Lightly spray or drizzle the fries with olive oil.
- Bake for 20-25 minutes, turning halfway, until golden brown and crispy.
- Serve warm with your favorite dipping sauce.

For added crunch, consider using panko breadcrumbs. Customize seasoning with garlic powder or Italian herbs. For a gluten-free option, substitute breadcrumbs with ground almonds or gluten-free breadcrumbs.
