Description

Deliciously crispy and cheesy zucchini fries that make for a healthy snack or side dish.


Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil spray or oil for drizzling

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchini into fry-shaped pieces.
  3. Set up a breading station: Beat the eggs with salt and pepper in one bowl, and mix grated Parmesan cheese and breadcrumbs in another bowl.
  4. Dip each zucchini piece into the egg mixture, then coat with the Parmesan-breadcrumb mixture.
  5. Place the coated fries on a baking sheet lined with parchment paper.
  6. Lightly spray or drizzle the fries with olive oil.
  7. Bake for 20-25 minutes, turning halfway, until golden brown and crispy.
  8. Serve warm with your favorite dipping sauce.

Notes

For added crunch, consider using panko breadcrumbs. Customize seasoning with garlic powder or Italian herbs. For a gluten-free option, substitute breadcrumbs with ground almonds or gluten-free breadcrumbs.
