Ingredients

- 8 oz linguine
- 1 lb ground beef or pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup parsley, chopped
- 1 egg
- 4 cloves garlic, minced
- 1/4 cup butter
- Salt and pepper to taste
- Olive oil
- Additional Parmesan for serving
Instructions
- Cook the linguine according to package instructions until al dente, about 8-10 minutes. Strain and reserve some pasta water.
- In a mixing bowl, combine ground meat, breadcrumbs, Parmesan, parsley, egg, and garlic. Season with salt and pepper, mixing until just combined.
- Form the mixture into meatballs, about 1 inch in diameter. Heat olive oil in a skillet over medium heat and cook the meatballs until browned on all sides, about 6-8 minutes.
- Reduce heat, add butter to the skillet, and stir until melted. Add drained linguine and toss gently. If necessary, add reserved pasta water to loosen the dish. Serve warm, topped with additional Parmesan.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth.
