  • 6 large eggs
  • 2 cups milk
  • 2 cups pancake mix
  • 2 tablespoons vanilla extract
  • 1/4 cup maple syrup
  • 1 teaspoon salt
  • 1 tablespoon baking powder

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with cooking spray.
  2. Cook the breakfast sausages in a skillet over medium heat until browned, about 6-8 minutes. Remove, let cool, and chop into bite-sized pieces.
  3. In a large bowl, whisk together eggs, milk, pancake mix, vanilla extract, maple syrup, salt, and baking powder until smooth.
  4. Fold in the chopped sausage and pour the mixture into the prepared baking dish.
