A delightful breakfast casserole featuring sweet apples and rich bread, perfect for serving at brunch.
Ingredients

- 6 slices of bread (preferably brioche or challah)
- 2 apples, peeled and diced
- 4 large eggs
- 2 cups milk
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup chopped pecans or walnuts (optional)
- Butter for greasing
Instructions
- Grease a 9×13 inch baking dish with butter.
- Cut the bread into cubes and layer half of the bread in the dish.
- Scatter the diced apples over the bread layer.
- In a bowl, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and nutmeg.
- Pour the egg mixture over the bread and apples, making sure everything is well-coated.
- Top with the remaining bread cubes and sprinkle with nuts if using.
- Cover the dish with plastic wrap and refrigerate overnight.
- In the morning, preheat the oven to 350°F (175°C).
- Bake uncovered for 40-45 minutes, or until the center is set and the top is golden brown.
- Let it cool slightly before serving.
Notes
Serve warm with maple syrup or powdered sugar. Leftovers can be stored in the fridge for up to 3 days.
