Juicy, tender chicken thighs with crispy skin and aromatic spices, perfect for a weeknight dinner.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Optional: fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper.
  2. Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet.
  3. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano to create a seasoning blend.
  4. Brush or drizzle the olive oil over the chicken thighs and sprinkle the seasoning blend evenly over each thigh.
  5. Bake for 35-45 minutes until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown. Let them rest for 5 minutes before serving.
  6. Garnish with freshly chopped parsley if desired.

Notes

For best results, pat the chicken dry before seasoning. You can also experiment with spices according to your taste.
