- 2 cups orecchiette pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped cucumbers
- 1/4 cup red onion, finely chopped
- 1 cup arugula or spinach
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the orecchiette pasta according to package instructions. Drain it well and let it cool down to room temperature.
- In a large mixing bowl, combine the cherry tomatoes, chopped cucumbers, finely chopped red onion, arugula or spinach, and crumbled feta cheese.
- Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl until well combined.
- Add the cooled pasta to the vegetable mixture and pour the dressing over everything. Toss everything together until well combined.
- Garnish the salad with fresh basil leaves and serve chilled or at room temperature for a delightful meal.
Notes
For optimal flavor, use fresh, in-season vegetables and allow the salad to chill for at least 30 minutes before serving.
