Description

A delightful Orecchiette Pasta Salad combining vibrant ingredients and creamy feta for a refreshing dish perfect for summer.


Ingredients

  • 2 cups orecchiette pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped cucumbers
  • 1/4 cup red onion, finely chopped
  • 1 cup arugula or spinach
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the orecchiette pasta according to package instructions. Drain it well and let it cool down to room temperature.
  2. In a large mixing bowl, combine the cherry tomatoes, chopped cucumbers, finely chopped red onion, arugula or spinach, and crumbled feta cheese.
  3. Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl until well combined.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over everything. Toss everything together until well combined.
  5. Garnish the salad with fresh basil leaves and serve chilled or at room temperature for a delightful meal.

Notes

For optimal flavor, use fresh, in-season vegetables and allow the salad to chill for at least 30 minutes before serving.
