  • 3 large eggs

  • 1 tbsp fresh orange zest
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup fresh orange juice
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • Extra orange zest for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with your favorite cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and orange zest.
  4. Mix the flour, baking powder, and salt in a separate bowl, then gradually incorporate into the wet mixture, alternating with milk and orange juice.
  5. Fill each cupcake liner about 2/3 full with the batter and bake for 18-20 minutes.
  6. Cool completely on a wire rack, then whip the heavy cream and powdered sugar until stiff peaks form.
  7. Frost each cooled cupcake generously and sprinkle with extra orange zest.
