Description

Ingredients

  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1 cup fresh cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bread loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In a separate bowl, blend together the softened butter, orange juice, orange zest, and eggs.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined; fold in cranberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Make sure your ingredients are at room temperature for a smooth mix. You can substitute whole wheat flour for half of the all-purpose flour for added fiber.
