Ingredients

  • 2 chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 cloves garlic, minced
  • 1 cup crushed tortilla chips
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the softened cream cheese, mozzarella, cheddar, minced garlic, salt, and pepper in a large mixing bowl until well mixed.
  3. Cut a pocket into each chicken breast and stuff with the cheese mixture.
  4. Sear the stuffed chicken in a skillet with olive oil until golden brown on both sides.
  5. Transfer the seared chicken to a baking dish and top with crushed tortilla chips, then bake for 25-30 minutes.
  6. Garnish with fresh parsley before serving.
