  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken breasts, cherry tomatoes, Kalamata olives, sliced red onion, and minced garlic.
  3. Drizzle the mixture with olive oil and sprinkle with dried oregano, dried thyme, salt, and pepper. Toss everything together until evenly coated.
  4. Transfer the mixture to a large baking dish and spread it out evenly. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Remove from the oven and garnish with fresh parsley before serving.
