- 2 cups cherry tomatoes
- 1 cup Kalamata olives
- 1 red onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken breasts, cherry tomatoes, Kalamata olives, sliced red onion, and minced garlic.
- Drizzle the mixture with olive oil and sprinkle with dried oregano, dried thyme, salt, and pepper. Toss everything together until evenly coated.
- Transfer the mixture to a large baking dish and spread it out evenly. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and garnish with fresh parsley before serving.
