Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Whisk until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a skillet or griddle over medium heat and lightly butter it.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown (about 2-3 minutes per side).
- Serve warm with your desired toppings.
Notes
For fluffier pancakes, let the batter sit for a few minutes. You can substitute almond milk for dairy-free pancakes.
