Description

Fluffy, tender, and pleasantly sweet, old-fashioned pancakes evoke a sense of nostalgia that few breakfast dishes can match.


Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a skillet or griddle over medium heat and lightly butter it.
  5. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form, then flip and cook until golden brown (about 2-3 minutes per side).
  6. Serve warm with your desired toppings.

Notes

For fluffier pancakes, let the batter sit for a few minutes. You can substitute almond milk for dairy-free pancakes.
