Delicious and healthy cookies made with ripe bananas and semi-sweet chocolate chips, perfect for breakfast or a snack.

- 2 large ripe bananas, mashed
- 2 tablespoons coconut oil (or melted butter)
- 2 cups rolled oats
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the bananas in a large bowl until smooth and stir in the coconut oil until blended.
- Add rolled oats, ground cinnamon (if using), and salt to the banana mixture and combine until thick.
- Gently fold in semi-sweet chocolate chips.
- Scoop heaping tablespoons of dough onto the prepared baking sheet and flatten slightly.
- Bake for 12 to 15 minutes until lightly golden and set.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
