Description

Delicious and healthy cookies made with ripe bananas and semi-sweet chocolate chips, perfect for breakfast or a snack.


Ingredients

  • 2 large ripe bananas, mashed
  • 2 tablespoons coconut oil (or melted butter)
  • 2 cups rolled oats
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a large bowl until smooth and stir in the coconut oil until blended.
  3. Add rolled oats, ground cinnamon (if using), and salt to the banana mixture and combine until thick.
  4. Gently fold in semi-sweet chocolate chips.
  5. Scoop heaping tablespoons of dough onto the prepared baking sheet and flatten slightly.
  6. Bake for 12 to 15 minutes until lightly golden and set.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
