Description

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups water
  • 1 cup mixed dried fruits (e.g., raisins, cranberries, apricots)
  • 1/2 cup chopped nuts (e.g., walnuts, pecans)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix together the flour, salt, and yeast.
  2. Stir in the water until a shaggy dough forms.
  3. Fold in the dried fruits, nuts, cinnamon, and vanilla extract.
  4. Cover the bowl with plastic wrap and let it rest at room temperature for 12 to 18 hours.
  5. Preheat the oven to 450°F (230°C) and place a Dutch oven inside to heat.
  6. When the dough is ready, turn it out onto a floured surface and shape it into a ball.
  7. Carefully remove the hot Dutch oven, place the dough inside, cover, and bake for 30 minutes.
  8. Remove the lid and bake for an additional 15 minutes or until golden brown.
  9. Let cool before slicing.

Notes

Store in a brown paper bag at room temperature for up to 3 days, or wrapped tightly and frozen for up to 3 months.
