Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup powdered sugar
  • 2 cups cream cheese, softened
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, sliced
  • ½ cup strawberry puree (optional)

Instructions

  1. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust. Refrigerate for 10 minutes.
  2. In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and mix well until creamy and combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Pour the cheesecake filling over the crust and smooth the top. Arrange sliced strawberries on top and, if desired, drizzle with strawberry puree. Refrigerate for at least 4 hours or until set. Slice, serve, and enjoy!
