- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup powdered sugar
- 2 cups cream cheese, softened
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, sliced
- ½ cup strawberry puree (optional)
Instructions
- In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust. Refrigerate for 10 minutes.
- In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and mix well until creamy and combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Pour the cheesecake filling over the crust and smooth the top. Arrange sliced strawberries on top and, if desired, drizzle with strawberry puree. Refrigerate for at least 4 hours or until set. Slice, serve, and enjoy!
