Description

Delightful no-bake cookies combining chocolate, coconut, and peanut butter, reminiscent of classic Girl Scout Samoas.


Ingredients

  • 1 cup shredded coconut
  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsweetened peanut butter
  • 1/2 cup honey or maple syrup
  • 1 cup chocolate chips
  • 1/4 cup toasted coconut (for topping)

Instructions

  1. In a large mixing bowl, combine the shredded coconut, graham cracker crumbs, cocoa powder, peanut butter, and honey or maple syrup until well mixed.
  2. Ensure all ingredients are fully incorporated into a sticky, dough-like consistency.
  3. Line a baking sheet with parchment paper. Scoop the mixture onto the prepared baking sheet and shape into cookie forms.
  4. In a microwave-safe bowl or double boiler, melt the chocolate chips until smooth and creamy.
  5. Dip each cookie in the melted chocolate and place back on the parchment paper.
  6. Sprinkle toasted coconut on top of the cookies while the chocolate is still wet.
  7. Refrigerate until set, about 30 minutes. Enjoy!

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months, separated with parchment paper.
