- 12 lasagna noodles
- 2 cups mushrooms, sliced
- 2 cups fresh spinach, chopped
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Toss in sliced mushrooms and cook until softened, about 5 minutes. Add chopped spinach and cook until wilted, seasoning with salt, pepper, and Italian seasoning.
- Spread a layer of marinara sauce in a baking dish, followed by a layer of lasagna noodles, ricotta cheese, and the mushroom-spinach mixture. Top with mozzarella cheese and more sauce, repeating layers until all ingredients are used, finishing with mozzarella.
- Sprinkle Parmesan cheese over the top layer. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes or until cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
Great for meal prep and can be frozen for longer storage.
