- 12 oz bowtie pasta
- 1 lb boneless, skinless chicken breast, bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried Italian herbs
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Boil the pasta in salted water until al dente, then drain, reserving 1/4 cup pasta water.
- In a bowl, mix chicken with salt, pepper, and Italian herbs.
- Melt 1 tbsp butter in a skillet, cook chicken until golden brown, then remove.
- Melt remaining butter, sauté garlic, add chicken broth, cream, and Parmesan, stirring until smooth.
- Return chicken to skillet, add pasta, tossing gently, and incorporate reserved pasta water as needed.
- Sprinkle mozzarella on top, cover for 2-3 minutes until melted, then garnish with parsley, pepper, and extra Parmesan before serving.
Notes
Pairs well with a light salad or garlic bread. Store leftovers in an airtight container for up to 3 days.
