Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • Optional: 1/2 cup streusel topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until combined.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced strawberries gently.
  6. If using, sprinkle the streusel topping over the muffin batter.
  7. Divide the batter evenly among the muffin cups and bake for 18-20 minutes.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
