- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 bag (32 oz) frozen tater tots
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped green onions (optional)
- Sour cream (for serving, optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large skillet over medium heat, cook the ground beef or turkey until well browned. Drain any excess fat.
- Add the drained black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
- Spread the meat mixture evenly in a greased 9×13 inch baking dish. Layer the frozen tater tots on top.
- Bake for 25-30 minutes until the tater tots are golden brown and crispy.
- Remove from the oven, sprinkle shredded cheese on top, and return to the oven for an additional 5 minutes.
- Garnish with chopped green onions and serve hot with sour cream if desired.
Notes
Can be prepared a day in advance and stored in the fridge before baking. Leftovers can be stored for up to 3 days.
