Description

A scrumptious twist on a classic comfort dish with seasoned meat, beans, crispy tater tots, and melty cheese, perfect for weeknight dinners and gatherings.


Ingredients

  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 bag (32 oz) frozen tater tots
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped green onions (optional)
  • Sour cream (for serving, optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet over medium heat, cook the ground beef or turkey until well browned. Drain any excess fat.
  3. Add the drained black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
  4. Spread the meat mixture evenly in a greased 9×13 inch baking dish. Layer the frozen tater tots on top.
  5. Bake for 25-30 minutes until the tater tots are golden brown and crispy.
  6. Remove from the oven, sprinkle shredded cheese on top, and return to the oven for an additional 5 minutes.
  7. Garnish with chopped green onions and serve hot with sour cream if desired.

Notes

Can be prepared a day in advance and stored in the fridge before baking. Leftovers can be stored for up to 3 days.
