Ingredients

  • 75 grams crumbled feta (about 1/2 cup)
  • 110 grams shredded mozzarella (around 1 cup)
  • 1 medium diced tomato
  • 33 grams diced red onion (roughly 1/3 cup)
  • 30 grams chopped fresh spinach (close to 1 cup)
  • 3 large flour tortillas (burrito style, roughly 25 cm each)

Instructions

  1. Combine the diced tomato, red onion, chopped spinach, crumbled feta, and shredded mozzarella in a bowl. Stir gently until well blended.
  2. Heat a bit of oil in a large flat pan or griddle over medium heat.
  3. Scoop one third of the filling onto one half of each tortilla. Fold the other half over to cover the filling.
  4. Cook the folded tortillas in the pan, flipping each side for 3 to 4 minutes until golden and the cheese melts.
  5. Cut the quesadillas into 4 wedges, serve warm with toppings like sour cream or salsa.
