- 110 grams shredded mozzarella (around 1 cup)
- 1 medium diced tomato
- 33 grams diced red onion (roughly 1/3 cup)
- 30 grams chopped fresh spinach (close to 1 cup)
- 3 large flour tortillas (burrito style, roughly 25 cm each)
Instructions
- Combine the diced tomato, red onion, chopped spinach, crumbled feta, and shredded mozzarella in a bowl. Stir gently until well blended.
- Heat a bit of oil in a large flat pan or griddle over medium heat.
- Scoop one third of the filling onto one half of each tortilla. Fold the other half over to cover the filling.
- Cook the folded tortillas in the pan, flipping each side for 3 to 4 minutes until golden and the cheese melts.
- Cut the quesadillas into 4 wedges, serve warm with toppings like sour cream or salsa.
Notes
