Description

A delightful dish showcasing tender white fish fillets baked on a bed of colorful vegetables, olives, and zesty lemon.


Ingredients

  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Mix the sliced red onion, red and yellow bell peppers, halved cherry tomatoes, minced garlic, and Kalamata olives in a large bowl. Drizzle in the olive oil, sprinkle with salt, pepper, and dried oregano, then toss everything together.
  3. Spread the vegetable mixture in the greased baking dish. Lay the fish fillets on top, then drizzle with the fresh lemon juice and zest. Bake uncovered for about 20–25 minutes.
  4. Garnish your dish with chopped parsley and serve with wedges of lemon on the side.

Notes

Consider adding a side of quinoa or couscous to soak up the delicious juices. It’s also great with a fresh arugula salad dressed with lemon vinaigrette.
