- 8 cups chicken broth
- 2 carrots, sliced
- 1 celery stalk, chopped
- 1 onion, diced

- Optional: chicken pieces
Instructions
- In a large pot, bring the chicken broth to a simmer over medium heat.
- Add the diced onion, sliced carrots, and chopped celery. Let it simmer for about 10 minutes until vegetables soften.
- Add the matzo balls to the pot and cook according to package instructions.
- If desired, add chicken pieces and continue simmering until heated through.
- Season with salt and pepper, stir in fresh dill or parsley before serving.
Notes
Store any leftover soup in airtight containers for up to 3 days in the refrigerator. For longer storage, freeze separately from matzo balls.
