Description

A comforting and heartwarming soup featuring fluffy matzo balls in rich chicken broth with tender vegetables.


Ingredients

  • 4 matzo balls
  • 8 cups chicken broth
  • 2 carrots, sliced
  • 1 celery stalk, chopped
  • 1 onion, diced
  • 2 tablespoons fresh dill or parsley
  • Salt and pepper to taste
  • Optional: chicken pieces

Instructions

  1. In a large pot, bring the chicken broth to a simmer over medium heat.
  2. Add the diced onion, sliced carrots, and chopped celery. Let it simmer for about 10 minutes until vegetables soften.
  3. Add the matzo balls to the pot and cook according to package instructions.
  4. If desired, add chicken pieces and continue simmering until heated through.
  5. Season with salt and pepper, stir in fresh dill or parsley before serving.

Notes

Store any leftover soup in airtight containers for up to 3 days in the refrigerator. For longer storage, freeze separately from matzo balls.
