- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves minced garlic
- 1 egg
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup chopped sun-dried tomatoes
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Red pepper flakes (optional)
- Fresh parsley (for garnish)
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and black pepper. Mix until just combined.
- Shape the mixture into 1.5-inch meatballs.
- Heat olive oil in a skillet over medium heat and brown the meatballs on all sides for about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté chopped sun-dried tomatoes and minced garlic until fragrant, about 2-3 minutes. Add chicken broth and heavy cream, stirring to combine.
- Bring to a gentle simmer, then return meatballs to the skillet and cook uncovered for 10-15 minutes, until meatballs are cooked through and sauce thickens. Garnish with parsley before serving.
Notes
Serve over pasta, with bread, or in subs. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
