- 4 medium apples, cored and chopped
- 4 large carrots, peeled and sliced
- 1/4 cup maple syrup

Instructions
- Preheat the oven to 400°F (200°C). Prepare the apples and carrots.
- In a large bowl, combine apples and carrots. In a separate bowl, mix maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Pour the glaze over the fruits and vegetables, mixing gently to coat.
- Spread the mixture on a baking sheet lined with parchment paper and roast for 25-30 minutes, stirring halfway through.
- Remove from the oven and garnish with fresh herbs if desired. Serve warm.
