Ingredients

  • 4 medium apples, cored and chopped
  • 4 large carrots, peeled and sliced
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare the apples and carrots.
  2. In a large bowl, combine apples and carrots. In a separate bowl, mix maple syrup, Dijon mustard, olive oil, salt, and pepper.
  3. Pour the glaze over the fruits and vegetables, mixing gently to coat.
  4. Spread the mixture on a baking sheet lined with parchment paper and roast for 25-30 minutes, stirring halfway through.
  5. Remove from the oven and garnish with fresh herbs if desired. Serve warm.

Notes

For added texture, sprinkle chopped nuts over the cooked dish before serving.
